A Virtuoso of Gastronomy

Subtle, emotional cuisine

The ONYX chef is driven by passion, and after aspiring to become a lawyer in his teens, it was an internship in the kitchens of one of his region's great chateaux that triggered the change from a dream of words to a dream of hands and gastronomy.

Childhood memories of her grandmother, who used to cook for her and let her taste all her dishes, the moments of family togetherness during these shared meals, this cuisine that brings people together, illuminates all life's precious moments and is the source of infinite pleasures.

In 2011, after graduating from the BAC Cuisine with a distinction in Pastry, he was awarded the title of Best Apprentice in France, a real challenge and a real coup for this young graduate.

He then began his career in his home town of Angers, working for Michelin-starred chef Pascal Favre d'Anne.

With a thirst for learning and perfecting his skills, he happily embarked on a professional gastronomic journey alongside a number of Michelin-starred chefs, including Alain Ducasse (Plaza Athénée), Akrame Benallal, Romain Meder, Emmanuel Pilon (now three-star chef at the Louis XV in Monaco), ...

A faultless start to his career took him to his first position as Chef de Cuisine in a Michelin-starred restaurant in the 17th arrondissement, then a second position as Chef in a 5-star estate in southern Corsica, before returning to Paris to a Michelin-starred restaurant on Avenue Montaigne.

It was the challenge and thrill of opening ONYX that made Nassim decide to take the reins of this brand-new Parisian establishment, for which he wrote the entire score.

THE RESTAURANT

The ONYX restaurant was the missing address close to Galeries Lafayette, offering a fine gastronomic stopover in a bright, designer atmosphere.

Its two levels offer a beautiful space to recharge your batteries, far from the hustle and bustle of Boulevard Haussmann, for lunch or tea time.

At night, the room undergoes a transformation, with a play of lights and a subdued atmosphere conducive to intimate dinners. The solid 4-meter ONYX wall and stylish iron staircase give a unique cachet to this magnetic venue.
